Sprouted Bean Salad

Serves: 4 Prep. time: 25 minutes Category: Veg Salad
1cup moong soaked and sprouted
1big tomato
3 - 4  lettuce leaves
1tspginger finely cut
1/2bunchcoriander leaves finely chopped
5 - 6  curry leaves
1/2tsp mustard seed
1tsp urad dal without skin
2tsp oil
  salt and sugar to taste
1. Put salt in moong, boil and strain.
2. Cut lettuce leaves and tomatoes finely.
3. Add coriander leaves, ginger, curd, salt, sugar and mix well.
4. Heat 2 tsp. oil and fry dal, mustard and curry leaves and pour on the salad. Mix and serve.
