Banana Bread

Serves: Makes 1 Loaf Prep. time: 35 minutes Category: Cakes & Cookies
AmtUnitIngredients
11/2cupsSifted Self raising flour or plain flour mixed with 11/2 teaspoons baking powder
2 Ripe bananas - well mashed
90gramsButter
3/4cupBrown sugar
1 Egg
100mlMilk
3/4cupCarrot - grated
30numberRaisin - optional
2tbspCashewnut pieces - optional
Directions:
1. In a 1-1.5 L bowl, cream the butter and sugar very well till light and fluffy.
2. Add the egg, beat thoroughly. Add banana and carrot.
3. Add the flour and milk simultaneously to the bowl and mix thoroughly.
4. Take about 10cmX20cm glass or any microwavable dish and grease the inner sides.
5. Pour the contents of the bowl into the dish.
6. Sprinkle the raisins and cashew pieces (Optional)
7. Cook in a microwave oven at Medium setting for about 12 minutes.
8. Cover the dish with a plate and allow the banana loaf to stand for 5 minutes.

Notes:
Cut into square pieces or slices. Can serve hot or at room temperature.
