Palak Paneer

150gmspaneer cut into 1" cubes and deep fried
1/2kgpalak - spinach with small leaves
2  onions
1" piece ginger
5-6 flakesgarlic - optional
2  tomatoes chopped
2  green chillies chopped
2-3 tbsp ghee
  salt to taste
2 moti illaichi (brown cardamom) skinned & powdered
1. Wash and chop, palak. Cook with 1/2 a cup of water.
2. Cool. Grind to a smooth paste.
3. Grind onions, garlic & ginger together.
4. Heat ghee. Add onion paste. Cook till onions turn golden brown and ghee separates.
5. Add chopped tomatoes & green chillies. Cook for 5 - 6 minutes on slow fire, till ghee separates.
6. Add the ground palak, add a little water if too thick.
7. Cook for 5 - 7 minutes on slow fire. Add salt.
8. Add illaichi and paneer. Mix well. Remove from fire.

Serving ideas:
At the time of serving, heat 1 tbsp ghee, add 1 tsp red chilli pd. Remove from fire and pour this baghar over the heated palak. Mix well. Serve at once.
